Change Environment in Options. Everything PaddleSubs shows and does follows: products, Access Subscriptions, licenses, the dashboard figures and the checkout. Nothing is deleted, and switching back brings the other environment's records back.

Webhooks are processed for the environment the site is set to when they arrive, so leave a notification destination active only in the Paddle account that matches it. Turn the sandbox destination off when you go live.
